It has been nearly two hundred years since the establishment of the world's first canned food factory in 1820 and the formation of canned industrial production.

Later, the rapid development of the steel industry and machinery industry technology and industry created favorable conditions for the development of canned food container-metal can industry, which gradually transformed the can manufacturing industry from backward manual production to mechanized production. At the same time, due to the in-depth study of the canned food industry's own professional theories, in 1864, Louis Pastrur discovered that food spoilage was caused by microorganisms, thus clarifying the principle of canning and formulating science. The canned production process has enabled the large-scale industrial production of canned food. The constant exploration of scientists, the continuous improvement of packaging materials and containers, the improvement of various processing technologies, the continuous improvement of sterilization equipment and technology, the continuous enrichment of processing varieties and scales, the reliability of quality and safety, and the increasing consumer satisfaction. The growing demand has enabled consumers to obtain more quality and cheap canned food. Canned foods are widely recognized by consumers because of their long shelf life, easy to carry and eat, so that the consumption of canned foods is increasing, the market is expanding, and it has been widely developed in the world.

Before the founding of New China, China's canned food industry only established a limited number of private canned enterprises in a few cities along the coast. These enterprises are small in scale, low in output, weak in foundation, and limited in variety. They are mainly exported to Southeast Asia, but they still appear. Some famous brand products, such as Can Maoxiang's canned squid, Canlin's spiced anchovies canned, onion baked squid canned, such as raw oil canned bamboo shoots have considerable popularity. “Merlin” has become an international brand name. After the founding of New China, the canned products in the East China region, especially the Jiangsu, Zhejiang and Shanghai canned factories, are all sold to the international market under the “Merlin” brand.

After the founding of the People's Republic of China, the party and the government attached great importance to the development of the canned food industry and adopted a series of measures to restore and develop the canned food industry. In particular, in terms of exports, we have tried every means to help enterprises open market portals, and also vigorously cultivate canned professionals and support them. Develop tank raw material bases to support enterprises in technological transformation. According to the state of resources, new state-owned canned enterprises have been established throughout the country. For example, Zhejiang Province has established seven state-owned canned enterprises, and the canned food industry has shown an increasingly prosperous scene. At present, China's canned food has entered a new period of development. As of the end of December 2010, according to incomplete statistics, China's canned enterprises have reached more than 3,000.

From the perspective of the sales structure of different canned products in China in 2017, the canned vegetables in China are the most popular in the industry, accounting for about 505% of the total sales revenue of the industry, followed by canned fruit, accounting for 2176%; meat and poultry The proportion of canned food is 138%. The proportion of canned fish and other types of canned food is less than 10%.

With the improvement of the living standards of the people, the characteristics of safe and nutritious convenience of canned foods are increasingly favored by consumers, and domestic demand is increasing year by year. According to the data of China Canned Food Industry Association, my output is generally on the rise in 2010-2018. In 2017, the national production of canned foods above designated size reached 12.3956 million tons, an increase of 3.75% year-on-year; from January to October 2018, China's canned output reached 8.784 million tons, making it the world's largest canner producing country.

In the first half of 2018, China's canned output was 46.846 million tons. Judging from the canned production in various provinces and cities across the country, there are 27 provinces and cities producing canned food in the first half of 2018. The top ten regions in canned production are Fujian, Hubei, Shandong, Anhui, Hunan, Guangdong, Sichuan, Zhejiang, Guangxi, and Henan. Among them, Fujian Province ranked first with a production output of 158.51 million tons, Hubei Province with a total of 537,600 tons, and Shandong Province with a total output of 46.77 million tons.
