The canned production process has enabled the large-scale industrial production of canned food. The growing demand has enabled consumers to obtain more quality and cheap canned food. Before the founding of New China, China's canned food industry only established a limited number of private canned enterprises in a few cities along the coast. These enterprises are small in scale, low in output, weak in foundation, and limited in variety. They are mainly exported to Southeast Asia, but they still appear. Some famous brand products, such as Can Maoxiang's canned squid, Canlin's spiced anchovies canned, onion baked squid canned, such as raw oil canned bamboo shoots have considerable popularity. “Merlin” has become an international brand name. After the founding of New China, the canned products in the East China region, especially the Jiangsu, Zhejiang and Shanghai canned factories, are all sold to the international market under the “Merlin” brand.

After the founding of the People's Republic of China, the party and the government attached great importance to the development of the canned food industry and adopted a series of measures to restore and develop the canned food industry. According to the state of resources, new state-owned canned enterprises have been established throughout the country. The proportion of canned fish and other types of canned food is less than 10%.

With the improvement of the living standards of the people, the characteristics of safe and nutritious convenience of canned foods are increasingly favored by consumers, and domestic demand is increasing year by year. According to the data of China Canned Food Industry Association, my output is generally on the rise in 2010-2018. In 2017, the national production of canned foods above designated size reached 12.3956 million tons, an increase of 3.75% year-on-year; from January to October 2018, China's canned output reached 8.784 million tons, making it the world's largest canner producing country.

In the first half of 2018, China's canned output was 46.846 million tons. Judging from the canned production in various provinces and cities across the country, there are 27 provinces and cities producing canned food in the first half of 2018. The top ten regions in canned production are Fujian, Hubei, Shandong, Anhui, Hunan, Guangdong, Sichuan, Zhejiang, Guangxi, and Henan. Among them, Fujian Province ranked first with a production output of 158.51 million tons, Hubei Province with a total of 537,600 tons, and Shandong Province with a total output of 46.77 million tons.
